Green Garlic or Spring Onion Lemon Vinaigrette
A bright citrus dressing with a touch of spice from the fresh garlic — the perfect spring dressing with little gems, arugula, mustard greens, or any lettuce.
2 tablespoons of lemon juice (white wine vinegar or apple cider vinegar work too)
1/8 teaspoon sea salt
1 tablespoon of green garlic tops or spring onion tops (all green some white), chopped
1/2 teaspoon Dijon mustard
4-5 tablespoons olive oil
