1 cup basmati
1.5 cups water
1 yellow onion
2 cloves minced garlic
1 handful fresh herbs (basil, dill, parsley, chives)
1 handful chopped spring onions and spinach (any greens/herbs work)
sea salt to taste
2 tablespoons coconut oil
Add pot to stove at high heat, add a drizzle of olive oil, minced onion, add garlic and saute until browned and fragrant.
Add rice along with 1.5 cups of water 1/2 tsp salt. Bring to boil, then simmer for 20 minutes uncovered, stirring occasionally.
While the rice is cooking, add all the herbs/greens to a food processor and chop until it creates a fine mixture. You can also finely chop the herbs by hand.
Once rice is cooked, remove lid, fluff with a fork, and season more to liking. Add chopped herbs/greens and 2 tablespoons of coconut oil. Serve hot!
