Simple Blanched Chard with Olive Oil and Lemon Juice

These boiled greens are a staple in any Greek household. They are easy to prepare, delicious, and accompany any dish beautifully. Make them in a flash and double the recipe because they will be gone before you can blink. Substitute the clean, pure taste of any wild green in this recipe and enjoy.
2 bunches beet greens or 2 heads rainbow chard or any wild green
¼ cup extra virgin olive oil
4 sprigs spring onion, sliced
2 garlic cloves, sliced
4 tablespoons red vinegar
Boil your greens in salted water about 5 minutes. Set aside to cool before roughly chopping
On medium heat, add GEVOO and sauté garlic and spring onion until fragrant (making sure not to burn).
Add boiled greens, salt and pepper. Sauté about 5 to 7 minutes.
Take off the heat. Add vinegar before serving.
